As you remember, every month we travel to a new country as a part of Around the World in 12 Dishes : season 2. It was originally created by Glittering Muffins and there are total of 13 blogs participating in this project. The idea is to “visit” 1 country a month (12 countries in a year) by exploring the cooking culture and craft. We all cook 1 (or more) dish with our children and some of us make crafts. Last month we visited Spain but we didn’t manage to cook anything Spanish. This month we are catching up on cooking and introducing you a very simple Spanish dish: Spanish Omelet.

I have an almost 5 year old who is a picky eater and a 1 year old who has been very cautious with what she eats. To satisfy their food choices, I went for the simplest recipe: Spanish Omelet.

There isn’t much science to this dish but it is a great breakfast item and a wonderful addition to lunch and dinner, as well as a nice quick snack from scratch for unexpected guests. Even before I’ve learned that this dish is called Spanish Omelet, I used to fry potatoes and then pour beaten egg on them and enjoy the dish (something we ate when we were little!).

Here’s what you will need:

Couple of medium potatoes (I used one large one)

4-6 eggs (I used 5)

One small onion

Olive or sunflower oil

Salt

How to make it:

1. Peel the potato and cut it into thin-ish slices. Slice the onion as well.

2. First, fry the onion in a bit of oil. As soon as it starts becoming golden brown, add potatoes and add more oil to almost cover them. Fry until potatoes are soft enough to be broken into halves with the spoon.2013-07-20

3. Beat the eggs with some salt in a bowl. When potatoes are ready, drain them off the excessive oil. Return back to the frying pan, pour eggs over and gently mix them.

4. Fry the omelet on medium heat until the bottom starts getting brown but then top is still wet. Gently separate the bottom from the pan, put a large flat plate over and turn them upside down so the omelet lays on the plate wet side down. Gently slide the omelet back to the pan and fry for another few minutes.

5. Serve it hot or warm, cutting up as you would a pie. Some like it with salsa sauce. We ate it just like that.077

My little helpers were with me in the kitchen. Miss T didn’t enjoy the omelet as much as miss A did.083-001
